Fr. Damien Schill has followed up his two previous cookbook volumes with this third volume that contains only desserts. Called Cooking & Eating with Father Damien & Friends 2020 Vol. 3., it definitely is worth adding to your collection. These recipes are culled from thousands he has made over the years as the Executive Chef for the Jesuits at the La Sorta House in Minneapolis along with recipes from Rae Ann Lehse who brought inspiration to create the cookbook series, but died before the first volume was started. The third volume by Fr. Damien Schill begins with Helpful Hints for baking.
Along with the elegant recipes, other helpful information is included such as pantry basics, herbs & spices, baking bread, baking desserts, vegetable & fruit cooking times, napkin folding, ingredient substitutions, equivalency charts, food quantities and microwave hints. Some of the pages have a fun Bible verse or saying included such as Psalm 119:103 – How sweet are your words to my taste, sweeter than honey to my mouth!. The recipes have been proofed a number of times but, as Fr. Damien Schill says, "there may still be some mistakes and I beg your indulgence since I did not have the help of professional proofreaders". Credit is given wherever possible to the people from whom Fr. Damien Schill originally received the recipe.
